Misuzu Knives is a small, family-run blacksmith shop located in Miki, Japan. While they make a variety of different knives using different metals, the line we are currently importing are made from AUS10 stainless steel. AUS10 is the top of the line steel from the AUS series of steels from Aichi Steel in Japan. AUS10 is in a similar class of steel as 440C, but out performs that alloy due to the additional carbon and vanadium used in its construction.

This great looking santoku features a lovely damascus finish, which is applied to the core stainless steel.

Santoku knives are general purpose blades used for many kitchen tasks. Santoku translates as “three virtues,” which describes the three common cutting techniques: chopping, dicing, and mincing. Many home chefs use a santoku as an alternative to a short gyuto or chef knife. Their increased blade height, rounded belly, and short length make them a perfect choice for home use where space is at a premium. Those preferring more hand-to-board clearance will be drawn to this style of blade. The santoku’s blade and handle are designed to work in harmony by matching the blade’s width/weight to the weight of blade tang and handle. So in practice, the Japanese santoku is a well-balanced knife fit for many purposes.
