Larger than the paring knife, this ceramic knife is best for all purpose tasks or with larger fruits.Ceramic knife are extremely hard, second only to diamonds. This hardness translates into an edge that won't roll like a steel edge. Ceramic knives hold their edge up to 10 times longer than conventional steel blades, including high carbon steels. Ceramic is also pure, unlike steel blades, ceramic blades will never rust and doesn't react with acidic or other foods. This also makes the knife very easy to clean. The new Kyocera Revolution line of ceramic knives have a deeper blade and redesigned handle to allow more clearance, great for larger hands. Revolution knives have ABS plastic handles.
